Banana Halwa

Ingredients
2 ripe Robusta bananas
1 tablespoon of ghee
2 cardamon pods
2-3 tablespoons of jaggery

Method
Peel and mash the bananas. In a saucepan heat the ghee and cardamon seeds over low heat for about 45 seconds. Add the bananas and stir till the ghee is mixed evenly with the bananas. Add the jaggery and blend well with the banana as it melts. Turn off the heat when the ghee starts separating from the mixture. Serve hot.  

Mashed Potatoes - 02

Ingredients
a pound of boiled potatoes
a cup of milk
a tablespoon of butter
salt to taste

Method
Peel and mash the potatoes. In a saucepan heat the butter and milk over low heat until the butter is melted. Slowly blend this mixture into the potatoes till it is smooth and creamy. Season with salt to taste.

Pasta - 03

For every 100 g of spaghetti - The Sauce


Ingredients
1/2 tablespoon of olive oil
1/2 tablespoon of butter
1 medium onion, finely chopped
7-10 garlic flakes, minced
1/2 - 3/4 cup of small or medium prawns
3 medium tomatoes, skinned and pureed
 
2 tablespoons of cheese, grated
1/4 cup of mint leaves
1 tablespoon of Italian seasoning 
Chilli flakes to taste
Salt to taste

Method 
Heat the Olive oil and butter in a skillet on low heat. Add the onion, and when it is half cooked add the garlic. Cook till they turn translucent. Add the prawns with the salt, Italian seasoning, and chilli flakes. Cook on high heat for about 30-45 seconds. Add the tomato and heat till the sauce starts bubbling. Add the cheese and stir it in till it is mixed with the sauce. Add the mint leaves and cook for a minute on low heat. 



Cook and drain the spaghetti separately. 


Serving suggestion:
Spoon the sauce over a bed of spaghetti and serve. 

Mango Pudding

Ingredients
2 small mangoes
1 glass of milk
4-5 tablespoons of sugar
2 tablespoons of cornflour

Method
  • Peel and pit the mangoes. Blend the mangoes in a food processor until it is smooth. 
  • Dissolve the sugar in the milk. Stir in the cornflour. Heat this mixture in a saucepan over moderate heat till it thickens.
  • Pour this into the food processor and blend for about 20 seconds. 
  • Transfer the pudding into a bowl and refrigerate till it sets.
